Since cabbage grows so easily (and big!) here in the Cariboo, we ofttimes stop up with heads over 10 pounds. What to do with all that cabbage? That'south piece of cake – we make Sauerkraut.

We love having jars of habitation canned kraut on hand for a quick meal in the winter. Hither'due south how to make Sauerkraut (and how to can it besides).

We exercise keep several heads in the Cold Room and they will easily keep down at that place until by Christmas with no problems.

Just peel off the outer layer and discard it before cutting upwardly the cabbage. Coleslaw is often on our dinner table here in the Fall.

We mix the cherry-red and green Cabbages together, grate some Carrot, add a few raisins or cranberries and put dressing all over it. We probably eat Coleslaw at least three times a week.

A stone crock that Sauerkraut will be made in.
A stone crock is a good investment for your homestead

I besides love decorating with my crocks (one even holds our woodstove kindling). Hither'due south my iii gallon alongside the dining room sideboard.

I'll simply borrow this one for a few weeks and start fermenting cabbage.

sliced cabbage ready for fermenting into sauerkraut

How to Make Sauerkraut:

Coarse salt with a measuring spoon in a bowl
Use coarse salt when packing the cabbage into the crock

For this recipe, I need 6 tablespoons of coarse pickling salt for every ten pounds of cabbage.

If you have a crock and don't know how much it will agree, the full general rule is v pounds of food for every 1 gallon of crock capacity.

Our 3 gallon jug crock should hold 15 pounds of cabbage. And so I need and measure out 9 tablespoons of the pickling table salt.

Large heads of cabbage on the counter ready to slice
Piece cabbage squeamish and thin before adding to the fermenting crock

Wash the cabbage, taking off the looser outer leaves. Starting time with a nice tight head of cabbage, then cut the cabbage in one-half.

Do it again, so you have 4 pieces, and cutting out the core from each.

Piece the cabbage (or use your nutrient processor to finely shred) very thin, weigh it and then put a layer in the crock.

I just slice our thinly with a adept kitchen knife. Information technology doesn't take long to get several heads of cabbage all gear up for the crock.

Layer thinly sliced cabbage into the crock and add together salt

As the cabbage is layered, pat it down firmly with your hand to remove as much air every bit possible.

On meridian of EACH layer, sprinkle some of the pickling table salt. Alternate Cabbage and the table salt until your crock is almost full.

Once my layers started getting higher, I used the bottom of a coffee cup to firmly pack the Cabbage down.

I desire as piffling air in in that location as possible. Actually squish that Cabbage down!

a sparse layer of plastic wrap will aid keep the cabbage seated in the crock

Fermenting the Sauerkraut:

Once you've got your Cabbage and common salt layered in the crock, tear some plastic wrap and place it on pinnacle, tightly tucking it down the sides if possible.

If y'all have to, tear more plastic wrap and just jam it around the border of the crock.

Remember, y'all want zero air coming into contact with the Cabbage! No air at all.

a ziplock bag full of water sits on top of the sliced cabbage
this will assistance keep the cabbage submerged and fermenting

Now take a plastic freezer bag iii/iv full of cold water and set that directly on superlative of the plastic wrap.

The bag will find any open areas and sit on top of it, hopefully removing ALL air at the acme.

Put the cover on your crock and leave it lonely for a couple of weeks.

Check it every few days – there should exist no scum sitting on the superlative. If there is, take a spoon and carefully remove it.

Make sure you put fresh plastic wrap on elevation. After it has stopped fermenting, information technology will exist ready for canning.

I've put a link beneath to my mail all about how to do the canning of your Sauerkraut.

For fermenting, you lot want a temperature of 68 – 72F or xx – 22C.

Jars of home canned Sauerkraut sit on the counter

Try making some Sauerkraut for your family! Y'all can use glass jars, if yous don't have a crock.

Don't utilise anything metal and never mix fresh cabbage in with cabbage already fermenting.

After it'southward ready, you will probably desire to read about how to water bathroom can Sauerkraut.

It is piece of cake to do and slap-up to take some jars on your pantry shelf!
